Patty is a pastry that contain various filling and spices baked inside the flaky shell. often tinted golden yellow with an egg yolk mixture or turmeric. It is made like a turnover but is more savory. Its first found in Jamaica, and also eaten in other areas of the Caribbean such as, Cayman Islands, Haiti, Costa Rica and others. Traditionally its filling by seasoned ground beef but fillings can included; Chicken, Shrimp, Vegetables, Lobster and Fish and Cheese. Patty could be eaten as full meal, especially paired with bread. Its also can made as bite-sized as it called cocktail patties, that we can serve as savories at the cocktail party.
As well as in Cayman, Patty is a popular food besides jerk, it can be found everywhere around the islands. It could be as snack, full lunch or dinner meal.
Here is A Cayman style Patty recipes;
PASTRY INGREDIENTS
4 cups all-purpose flour
1 tsp. turmeric
1 tsp. curry powder
2 tsp salt
8 tbsp. vegetable shortening
8 tbsp. unsalted butter
1/2 cup plus 2 tbsp. cold water
1. Mix flour, spices and salt for a minute in a food processor.
2. Cut shortening and butter into small pieces and sprinkle over dry ingredients. Pulse the mixture until combined.
3. With the motor running, drizzle water into feed tube until dough comes together.
4. Remove from food processor and kneed once or twice to bring the dough together. Cover with plastic wrap and refrigerate for 2 hours.
FILLING
2 tbs. vegetable oil
1 large onion (chopped)
6 cloves garlic (chopped)
1 tbs. finely chopped ginger
1 lb. lean ground meat ( may substitutes with chicken, veggie, shrimp,etc )
1/4 tsp. ground turmeric
3/4 tsp. ground cumin
3/4 tsp. ground all spices
1/2 tsp. ground cardamom
1 Scotch bonnet pepper, seeded and finely chopped.
3 Scallions, finely chopped
1 tbsp. parsley finely chopped
1 tbsp thyme
1 lb. ripe tomatoes, finely chopped
1 1/2 tbsp. salt
Freshly ground black pepper
3/4 cup of water or stock
1. Heat the oil in large skillet. add onion and cook until softened. Add garlic and ginger and cook for one minute.
2. Add ground meet, spices, hot pepper and thyme. Cook for about two minutes until meat is browned.
3. Add Scallions, parsley, tomatoes and stock. Simmer for about 25 minutes until most of the liquid has evaporated. Season to taste.
4. Cool before assembling.
MAKING THE PATTIES
1. Preheat oven to 400 degrees Fahrenheit
2. On a lightly floured board, roll out dough to pie crust thickness. Cut into circles about seven inches in diameter.
3 .Spoon 1/4 cup of filling into each round and fold in half. Seal edging with tines of fork.
4. Place patties on lined baking sheet. bake for 30 minutes.
5. Served warm.
The sizes of the patties is as desire, we can make it smaller for more patties and served them as a savories. Please Enjoy :-)
